- 1/2 tsp. organic pumpkin pie spice
- 1/2 tsp. organic vanilla extract
- 1 pinch sea salt
- 1/4 cup organic chia seeds
Directions
- Mix milk, agave, pumpkin, pumpkin pie spice, vanilla, and salt in a blender until fully combined.
- Pour into a container and add chia seeds while mixing with whisk or fork.
- Let chia seed mixture sit for 30 minutes, stirring every 10 minutes or so as it begins to thicken.
- Seal container and set in fridge for at least 3 hours, until desired consistency is reached.
- Transfer to serving dish and garnish with toppings of choice!
Pro Tips:
- For a standalone pumpkin spice experience, you can omit the canned pumpkin from this recipe without needing to make any major changes to the other proportions.
- Chia seed pudding makes a great morning meal! Make this the recipe before bed for a seasonal breakfast the next day.
- You can “revitalize” overly thick chia pudding by stirring in a splash of milk before eating.
- Pumpkin fans may want to combine some leftover pumpkin puree with a bit of syrup and pumpkin pie spice to create a quick and easy topping for your pudding
